3 Tbsp Equinom 65% Pea Protein
1 large eggplant
1 lemon (juice only)
4 tbsp sesame paste
Pinch of salt
2-4 Fresh garlic cloves, minced (optional)
Parsley, chopped (optional)
Olive oil (optional)
Paprika (optional)
Mix Equinom Pea Protein with salt
Preheat oven to 450F
Prepare a baking sheet with tinfoil sprayed lightly with nonstick cooking spray
Prick eggplant with fork on all sides and place onto the baking sheet and into the oven
Bake on center rack for 40 to 45 minutes until eggplant is very soft and skin is peeling off - make sure to rotate eggplant occasionally
Remove eggplant from oven, carefully cut open and scoop out the hot insides into your food processor or mixing bowl
While still warm, add minced garlic (optional), sesame paste, lemon juice, and the mixture of Equinom Pea Protein and salt
Process until smooth
Add additional salt to taste
Transfer to serving bowl and garnish as desired with olive oil, parsley and paprika
Serve with cut veggies, fresh pita or pita chips
